Broiled Marinated Eel

2 pounds medium size eels, skinned, cleaned, cut Wash eels in cold salted water, rinse and drain well.

1 cup white wine vinegar Salt and broil, adding some marinade as you do so

2 bay leaves Serve hot or cold, with lemon wedges.

Broiled eels have been an annual tradition in my family for many generations, as part of the
Italian-American “Feast of the Seven Fishes” Christmas Eve celebration — an extravagant and
festive meal that includes a wide variety of seafood such as baccalà (salt cod), calamari, clams,
and more. I have fond memories of my mother proudly donning her favorite “Kiss the
Cook” apron as she served this highly anticipated once-a-year
ethnic delicacy. Buon appetito! Mangia!
